Cheese Blocks

** During the hot summer months (May-October) we suggest getting an insulated box, when the temperature is over 75 degrees.  Even though the gel pack may be thawed by the time you receive it, it has done its job to keep your cheese cool during transit.  If it is not added and it is hot we may add it to your order for $8.00 more**

Blocks keep well unopened for several months and usually about 4 weeks open well wrapped to keep most of the air out to prevent the cheese from drying out.  Use foil, wax or parchment paper (2 layers thick), spread with a thin coat of butter before wrapping or putting in an air tight plastic bag.  With larger blocks you can cut them in half/thirds/etc and wrap pieces very well and keep one to use daily or whenever you need cheese.  That way the entire block won't be opened every day or two.  If you have a food vacuum sealer that works even better to keep part of your block up to double or triple the length of time you might get with just being well wrapped.

DO NOT FREEZE CHEESE!  It alters the texture and does not keep well once thawed.  It's okay to freeze small amounts of shredded cheese intended only for cooking.
