We test our batches of cheddars regularly and determine which few have the potential to age another 3 years. By that age you may find the tiny crunchy crystals which occur naturally in very old cheese. The official name is tyrosine and it's an amino acid made when various proteins break down. It's not a flaw but usually something connoisseurs of extra sharp cheddar look for.

This is aged for 72 months; it is an experience to taste. Instead of a waxy taste this is full flavor. It is best to he eat cheese when it is at room temperature. You gift will be marvelled over.

Totally worth the price
I have purchased cheddars from multiple states and countries for my husband and this is the "sweet spot" - best overall taste and most reasonable price. I buy the five pound block, cut it in half, wrap half very tightly in two layers and put it in a ziplock. It keeps for months while we eat the other half.

I believe this is the best cheddar cheese in the country. If you haven't tried it you are missing the very best.
