During the warmer months above 75 degrees (late May to mid October) we recommend the insulated box and ice pack. When you open your package the contents and gel pack may have warmed up to room temperature but that's ok as it has kept the cheese cool during its journey.
Please remember that cheese is remarkably resilient, having been invented well before refrigerators. Our blocks of cheese are always brought to room temperature to facilitate cutting and they warm up even more when dipped in the hot wax. Upon arrival at your home please refrigerate until firm. We do however recommend cheese be served at room temperature to enjoy its flavor.
