The 3 year extra sharp is our best seller! What makes cheddar become extra sharp, more flavor and texture appear different from various cheese makers? The combination of the quality of milk, skill of the cheese maker, different variations of cultures and enzymes and the patience of the cheese aging process at the proper temperature all contribute to full flavor and consistent character. At 3 years old all the lactose has dissipated, so it's perfect for those who are lactose intolerant.

The best cheddar you will find.
Most of the "artisan" cheeses offered in groceries and box stores are commercial knock-offs of classic styles. The overall quality, as measured by faithfulness to style, texture, and flavor is middling at best. And it costs $16 per pound. Sugarbush Farm's Extra Sharp Cheddar picks up well beyond where the stores leave off, and after sampling it, you will assign it to a new category, and understand why I put artisan in parentheses. This aged cheddar is excellent.

Highly Addictive
I'll confess these large blocks of really old cheddar are pretty much what I've bought for close to 10 years. True the sage and smoked cheese is also good and the Bleu is out of this world but every year I buy 10 pounds of this ancient cheddar at Christmas. It's the one present everyone wants repeats on.
