All pure maple syrup is Grade A but broken down into four categories to explain how color and strongness of maple flavor change over the period of 4 to 6 weeks during the spring sugaring season. This occurs as the sugars in the sap become more complex as the weather goes from cold in early spring when the Golden is made to into early April when the season is almost over and the weather has turned warmer and the very dark syrup is produced. Sugarbush Farm uses 4 different color labeling stickers on the top lid, so if you already have some in your refrigerator you can check which one you had before. Golden color has a gold label, Amber color has a yellow label, Dark color has a white label and the Very Dark has a red label.
